Ingredients:
- 2 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/4 cup feta cheese, crumbled
- 1 garlic clove, minced
- 1 tbsp olive oil
- Salt & pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Slice a pocket into the side of each chicken breast.
- In a bowl, mix spinach, feta, and garlic.
- Stuff the mixture into the chicken breasts and secure with toothpicks.
- Heat olive oil in a pan and sear the chicken breasts for 2-3 minutes per side.
- Transfer the chicken to the oven and bake for 20-25 minutes until fully cooked.
